2 1/2 cups whole wheat (or all-purpose) flour
1/2 cup ground flax seed
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
1 tsp. ginger
1 tsp. nutmeg
1/8 tsp. cloves
1 1/3 cups plain low-fat yogurt (or buttermilk)
1/3 cup canola oil
1 1/2 tsp. vanilla extract
2 eggs, lightly beaten
1/2-3/4 cup packed brown sugar
1 Granny Smith apple, cut into small cubes
- Preheat the oven to 375 degrees. Spray a muffin pan with Pam or line with muffin cups.
- Sift the flour, flax seed, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves in a large bowl.
- In a separate bowl, mix together the yogurt, canola oil, vanilla extract, eggs, and brown sugar. Add the apples and mix.
- Combine the wet and dry ingredients.
- Bake for 25 minutes.
