I started adding walnuts to this recipe special for my Pop-Pop. He absolutely loves them. He orders it on his pancakes, puts it in his cereal, and now requests it in his banana bread. I like to bake this for him every once in a while just to hear the happiness in his voice when he calls to tell me he's eating and enjoying it. Once I started adding nuts to his bread, I couldn't stop adding it mine! It has lovingly been renamed "Pop-Pop's Banana Walnut Bread." I hope you like it as much as he does.
2 mashed ripe bananas
2/3 cup sugar
1/4 cup vegetable oil
1 large egg white
1 large egg
1 3/4 cup whole wheat flour (all-purpose flour works, too)
1/3 cup flaxseed meal
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup walnuts, chopped (optional)
cooking spray
- Preheat oven to 350 degrees and spray an 8x4 inch loaf pan with cooking spray.
- In a large bowl, combine the bananas, sugar, vegetable oil, egg white, and egg with a mixer on low speed.
- Add the flour, flaxseed meal, baking soda, and salt. Mix on low speed, then add the walnuts.
- Pour the batter into a loaf pan.
- Bake for 40 minutes. Use a cake tester to see if it comes out clean.
- Cool in the pan on a wire rack for 10 minutes, then remove from the pan and cool completely.
