Apple Spice Muffins

Recipe adapted from Vegetarian Cooking for Everyone by Deborah Madison.


2 1/2 cups whole wheat (or all-purpose) flour
1/2 cup ground flax seed
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
1 tsp. ginger
1 tsp. nutmeg
1/8 tsp. cloves
1 1/3 cups plain low-fat yogurt (or buttermilk)
1/3 cup canola oil
1 1/2 tsp. vanilla extract
2 eggs, lightly beaten
1/2-3/4 cup packed brown sugar
1 Granny Smith apple, cut into small cubes

  1. Preheat the oven to 375 degrees.  Spray a muffin pan with Pam or line with muffin cups.
  2. Sift the flour, flax seed, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves in a large bowl.
  3. In a separate bowl, mix together the yogurt, canola oil, vanilla extract, eggs, and brown sugar.  Add the apples and mix.
  4. Combine the wet and dry ingredients.
  5. Bake for 25 minutes.
